Is store credit better than giving cash back?

Usually. The money stays in the restaurant, the customer has a reason to come back, and you have a written record of the apology. Cash back ends the relationship politely. Credit continues it. Where the customer is angry and wants nothing more to do with you, give the cash and let it go.
